É um espaço onde a Maria - Tia Maria Pasteleira para o Manel - partilha com o mundo as suas artes.. a comida e a fotografia!

Se não conhecem vão ter um problema... se já conhecem, então já sabem no problema em que se meteram.


As coisinhas que a Maria  faz são viciantes e nhamis! Um problema, portanto... para o peso, principalmente! 


Mas em contrapartida deixam-me muito feliz. Não são só tardes que passamos na conversa entre amigos. Todo o encontro é uma experiência em que nos concentramos todos na cozinha mas desertos de irmos para a mesa experimentar as delícias que saem daquelas mãozinhas bronzeadas!


Ah... o outro problema? Fotografa tudo o que faz... e fotografa com alma, garanto-vos! Até parece que sentimos o cheirinho das coisas, sentimos a textura e saboreamos os ingredientes.

Ana’s Cake
Or the pornographic one, as my friend Ricardo decided to call him . Why Ana’s? Ana is a great friend of mine that dream with this cake. When I invite my friends to have a weekend snack with me, she dreams with it. ☺ It’s a really good cake, very tasty and smooth, but the recipe is not mine. I saw it on another blog and made some changes. It it adorable.

Ingredients:
 • 180gr of sifted flour  • 350gr of sugar  • 190gr butter  • 200g dark chocolate • 140gr raspberries  • 1 package of cream cheese • 1 natural yoghurt • 5 eggs
Steps:
 I preheat the oven to 175 º. Unto and lining with parchment paper a rectangular board. Beat the softened butter with half of the sugar (175gr) until the mixture is fluffy. I mix 3 eggs, one at a time and continue beating. Next step is to melt chocolate in double boiler with 4 tablespoons of mill, and then melted together in the preparation of eggs. Then, I add the flour and wrap slowly and delicately. I reserve this cream for a while. Mix together the cream cheese and yogurt and beat with a wire rod (manually) . Add the eggs, the remaining sugar and the zest of two limes until the mixture is creamy. Lay the brownie mix in the form and then the cream cheese. With the aid of a toothpick I slightly involve the two mixtures to obtain a dyed effect. I put the raspberries on top of the dough and let in the oven for about 40/45 minutes. It is very important to let the cake cool for about 45 minutes before cutting . Otherwise will break .

O Bolo da Ana

Ou o bolo pornográfico, como o Ricardo decidiu chamar-lhe. Porquê o Bolo da Ana? Porque pelos vistos quando sabe que o vou fazer até sonha com ele. É um bolo mesmo muito muito muito bom mas não é da minha autoria. Vi-o noutro blog e fiz algumas alterações. Vale muito a pena.

Ingredientes:
• 180gr de farinha peneirada• 350gr de açúcar• 190gr de manteiga• 200gr de chocolate negro• 140gr de framboesas • 1 pacote de queijo creme • 1 iogrute natural• 5 ovos

Como faço:
 Pré-aqueço o forno a 175º. Unto e forro com papel vegetal uma forma rectangular. Bato a manteiga amolecida com metade do açúcar (175gr) até obter um creme fofo. Misturo 3 ovos, um de cada vez, e continuo a bater. Derreto o chocolate em banho maria com 4 colheres de sopa de leite e, depois de derretido, junto no preparado dos ovos, açúcar e manteiga. Junto a farinha e envolvo devagar e de forma delicada. Reservo este creme. Junto o creme de queijo e um iogurte natural e bato com uma vara de arames (manual). Junto os ovos, o restante açúcar e raspa de duas limas até obter uma mistura cremosa. Deito a mistura do brownie na forma e por cima o creme de queijo. Com a ajuda de um palito alto envolvo ligeiramente as duas misturas de modo a obter um efeito tingido. Deito as framboesas por cima da massa. Deixo no forno durante cerca de 40/45 minutos. É muito importante deixar o bolo arrefecer durante cerca de 45 minutos antes de o cortar. De outra forma vai quebrar.

Apple and Berries simple tart
Simple, sugar free and lovely.

Ingredients:
• 1 fresh pastry pack (easy to find in any supermarket) • 5 eggs • 5 tablespoons sugar • 5 tablespoons flour • 2 tablespoons butter • 1 grated apple• berries to decorate
Steps:
 Line a form of pie with pastry. Beat eggs and sugar with an electric mixer and when they make a soft cream add the butter to the mix and then the flour. Lastly put the grated apple. Lay the mixture in the form and distribute red fruits on top. Take it to preheated oven for 40 minutes at 200 ° - usually after 20 minutes I put an aluminum sheet on top to prevent burning.

Tarte de Maçã e Frutos vermelhos

Simples, pouco doce e bonita.

Ingredientes:
• 1 pacote de massa quebrada de compra • 5 ovos • 5 colheres de açúcar • 5 colheres de farinha • 1 maçã ralada• 2 colheres de sopa de manteiga derretida • frutos vermelhos frescos para decorar

Como faço:
 Forro uma forma de tarte com a massa quebrada já pronta. Bato os ovos inteiros e o açúcar com a batedeira eléctrica e quando fizerem uma massa cremosa junto a manteiga e de seguida a farinha. Coloco por ultimo a maçã ralada. Deito a mistura na forma e distribuo os frutos vermelhos por cima. Levo ao forno previamente aquecido durante 40 minutos a 200º - normalmente passados 20 minutos ponho uma folha de aluminio por cima para não queimar.

Most loved pizza of all time

Ingredients:
• 1 package of pizza dough• 8 slices of ham • 1 mozarella cheese  • 2 handfuls of arugula  • 200g freshly grated parmesan cheese (which makes THE difference) • 4 tablespoons of tomato fresh paste • olive oil
Steps:
 Start by turning on the oven to 220 degrees and let it heat while preparing the pizza. Grease and line a rectangular springform with parchment paper and place the pizza on top. I start by spreading fresh tomato pulp with a brush or a spoon. With my washed hands I scrap and lay mozzarella cheese on top, followed by the ham slightly curled. I spread the arugula and Parmesan cheeses freshly grated and finish with a drizzle of olive oil. Put in the oven and wait 25 minutes. When it is ready, I just lay a little more arugula and fresh grated Parmesan cheese and sit comfortably to appreciate its simplicity.

A pizza mais adorada de todo o sempre

Um dia de trabalho daqueles em que tudo corre bem e nos preenhce. Várias series para pôr em dia e vontade zero de mexer na cozinha. Demora cinco minutos a preparar e a satisfação depois de se comer demora horas.

Ingredientes:
• 1 pacote de massa pronta para pizza• 8 fatias de presunto • 1 queijo mozzarela• duas mãos cheias de rucula • 200g de queijo parmesão ralado na hora (o que faz a diferença)• 4 colheres de sopa de polpa de tomate fresco • azeite qb

Como faço:
 Começo por ligar o forno a 220º e deixo-o aquecer enquanto preparo a pizza. Forro uma forma rectangular baixa com papel vegetal e coloco a massa para pizza por cima. Começo por espalhar a polpa de tomate fresca com um pincel ou uma colher. Desfaço com as mãos o queijo mozzarella e deito por cima, seguindo-se o presunto ligeiramente enrolado. Espalho a rucula e o queijo parmesão ralado na hora e rego com um fio de azeite. Coloco no forno e espero 25 minutos. Quando fica pronta, deito apenas um pouco de rucula fresca e mais queijo parmesão ralado e sento-me confortavelmente a apreciar a sua simplicidade

Fig and pomegranate cake
Autumn! Yes, autumn … that season no one wants because it takes away the sun, the beach and the long days. I like it … it is the beginning of those chilly end of days, first teas with 1001 flavors and that “I don’t want to leave the couch” feeling on Sunday. This and the figs, apples and pomegranates I do not ever get tired of.

Ingredients:
• 250g sugar • 6 figs pulp  • 1 cup pomegranate juice  • 6 eggs  • 150g cake flour  • 100g chestnut flour • juice of one lemon
Steps:
I start by turning on the oven to 200º and let it heat while I prepare the cake. Grease and line the bottom and sides of a 20cm springform cake tin with greaseproof paper. Using an electric whisk, beat the sugar with the egg yolks, the fig pulp until creamy. After, I ad the flours, pomegranate juice and heat it slowly with a wood spoon. Using an electric whisk, I beat egg whites and finally ad the lemon juice. When the mixture is creamy and bubbling, spoon it into the prepared cake tin and bake in the preheated oven for 40 minutes or until lightly golden.
Two notes: 1) Fig pulp is just the inside figs crushed with a fork. 2) Pomegranate juice: join the buds with half glass of water and a tablespoon of sugar

Bolo de Figo e Romã

Outono! Sim, Outono… aquela estação que todos querem ver longe porque leva o sol, a praia e os dias compridos embora. Eu gosto quando aparece… é sinal do primeiro friozinho ao final do dia, os chás de 1001 sabores e a vontade de ficar no sofá sempre mais um bocadinho ao Domingo. Isto e os sabores dos figos, das maçãs e das romãs que não me canso nunca de comer.

Ingredientes:
• 250g de açúcar• polpa de 6 figos • 1 copo de sumo de romã• 6 ovos • 150g de farinha com fermento • 100g de farinha de castanha • sumo de um limão

Como faço:
 Começo por ligar o forno a 200º e deixo-o aquecer enquanto preparo o bolo. Forro uma forma rectangular com manteiga e coloco papel vegetal por cima. Para a preparação da massa começo por bater, com a ajuda uma batedeira electrica, as gemas, os açúcar e a polpa dos figos. Quando a mistura estiver homogenea junto as farinhas, o sumo da romã e mexo cuidadosamente. Adiciono as claras batidas em castelo e por fim o sumo de limão. Quando a mistura estiver bem envolvida, basta colocar na forma forrada anteriormente e levar ao forno por 40 minutos. 
Duas notas: 1) polpa de figo não é mais do que o interior dos figos esmigalhado com um garfo. 2) faço o sumo de romã juntando aos gomos meio copo de água e uma colher de açúcar

Ingredients:
To the muffin:• 115g unsalted butter, softened• 115g caster sugar• 4 large eggs• 180g ground almonds• 30g poppy seed• zest and juice of 2 lemons• 125g self-raising flour, sifted
For the lemon syrup:• 100g caster sugar• 90g lemon juice
For the lemon icing:• 225g icing sugar• zest and juice of 1 lemon

Steps:
 Preheat the oven to 180ºC/350ºF/gas 4. Grease and line the bottom and sides of a 20cm springform cake tin with greaseproof paper. Using an electric whisk, beat the butter with the caster sugar until light and creamy. Add the eggs one by one, beating each in well. Fold in your ground almonds, poppy seeds, the lemon zest and juice and the sifted flour. Spoon the mix into the prepared cake tin and bake in the preheated oven for 40 minutes or until lightly golden. You can check to see if the cake is cooked by poking a cocktail stick right into the sponge. Remove it after 5 seconds and if it comes out clean the cake is cooked; if slightly sticky it needs a little longer, so put it back in the oven. Allow the cake to cool on a rack. Make your lemon syrup by heating the sugar and lemon juice in a pan until the sugar has dissolved. While your cake is still warm, make lots of little holes in the top with a cocktail stick and pour your syrup over. To make your icing, sift the icing sugar into a bowl and add the lemon zest and juice, stirring until smooth. When your cake is almost cool, put it on a serving plate and pour the icing carefully over the top. If you pour it on to the middle of the cake, then let gravity disperse the icing down the sides, you get the ‘drizzle’ effect! Give it a helping hand with a spoon if you want.

Bolo de Limão

Esta é a receita do Jamie Oliver que mais adoro. Não tenho muito mais a dizer a não ser que é perfeita, perfeita, perfeita em todos os sentidos.

Ingredientes:
Para o bolo:• 115g manteiga sem sal, amolecida• 115g açúcar branco• 4 ovos grandes• 180g amêndoas raladas• 30g sementes de papoila• raspa e sumo de dois limões• 125g farinha com fermento, peneirada
Para o xarope de limao:• 100g açúcar• 90g sumo de limão
Para o glacê:• 225g açúcar em pó• raspa e sumo de um limão

Como faço:
 Pré-aquecer o forno a 180 º C. Unto e forro o fundo e os lados de forma de bolo com manteiga e ponho por cima o papel vegetal. Com a ajuda de uma batedeira eléctrica bato a manteiga com o açúcar em pó. Adiciono os ovos, um a um, batendo entre cada um. Junto a amêndoa ralada, as sementes de papoila, a raspa e o sumo de limão e a farinha peneirada. Coloco a mistura na forma de bolo preparada e deixo no forno pré-aquecido por 40 minutos ou até ficar levemente dourado. Deixo o bolo arrefecer sobre uma grade. Faço o xarope de limão aquecendo o açúcar e o sumo de limão numa panela até que o açúcar se dissolva. Enquanto o bolo ainda está quente, faço vários pequenos furos na parte superior com um palito e deito o xarope até acabar. Para fazer o glacê, peneiro o açúcar em pó numa tigela e adiciono as raspas de limão e o sumo, mexendo até ficar homogéneo. Depois de o bolo estar no prato de servir deito esta cobertura por cima e fico deliciada a observar como a cobertura cai ☺
